Pinwheel Sandwiches

Christmas is just around the corner. Along with the christmas season are christmas parties. If there are christmas parties, there are potlucks. If there are pot lucks, there should be party platters. Then you'll be stuck thinking of what to bring? One food that will come to mind when you hear party platters is the ever popular Pinwheel sandwiches. On making these kind of sandwiches you can use tortilla or just compressed bread. You can play with the fillings or sauces that you want to put. It's actually very easy to make. Vraiment!

The recipe below is from Homebasics Canada. Following the recipe will be the variations that I usually make.

Smoked Salmon Pinwheels

Ingredients

8 oz Cream Cheese (250 g)
2 Tbsp Sweet Mustard (30 ml)
2 Tbsp Mayonnaise (30 ml)
4 large tortillas
8 Boston lettuce leaves
12 oz thinly sliced smoked salmon (340g)
2 tbsp chopped fresh dill

In a medium bowl, combine cream cheese, mustard and mayonnaise. Spread the cheese mixture evenly over the tortillas. Top with smoked salmon and lettuce, leaving a 1-inch (2.5cm) border at one edge. Sprinkle with Dill. Roll up the tortillas tightly, pressing to seal. Slice each tortilla roll into 8 to 10 slices and arrange on a platter, salmon side up. Makes about 35.


Variations:

For cream cheese, I personally use Philly light, not the cubed ones, only because I find the cubed ones very heavy on the taste.

For Mustard, I prefer Honey Dijon.

With regards to Tortillas, you can experiment on tortillas. There are a lot of different flavored tortillas in the market. Just recently I made pinwheel sandwiches using Pesto and Garlic Tortillas and Sun dried Tomato tortillas. It's colorful and nice on the platter.



On the filling, this will depend on your taste. You can put smoked salmon like the recipe suggested. Or you can use ham, bologna, tuna, chicken or whatever.

On vegetables and herbs, aside from dill and lettuce, you can always toss some cucumbers cut into strips, or avocado. It's your call, really!
